LOL..Veloris...gumbo must be spicy...it&#039;s must open up your sinuses and you must have watered eyes...lol...at least in my house...what I say if you can&#039;t handle the spice is cut back on it...and serve it with a side of hot sauce so everyone can spice it up more...]]></description>

The roux should be smooth and creamy, always stir it before adding it to the gumbo, it shouldn&#039;t be any stuck flour on the bottom of the pan, otherwise that could be burnt roux, which means you would have to start over again. If it&#039;s just flour that has solidified after cooking that&#039;s fine, but it should become smooth after stirring it again with the excess oil that has risen to the top.
