Hello Valerie, my grocery store only has one size corn tortilla shells which are the small/medium size ones. You can use any size you prefer you could also use flour instead of corn. Enjoy!

Hello Valeie, that's a great idea to save sauce for later to pour over. I use corn because my husband prefers corn to flour.

While this was very tasty, (the Buffalo is a 2-alarm kicker for me), I cook generally for the coming week, not for immediate serving. I find that both the chicken and the ground beef/andoule tortilla shells soak up the sauce leaving it dry by the time I/we eat it (there's only 2 of us). Is it ok to pour mild enchilada sauce over it for future servings? Why did you use corn instead of flour (just asking)?

Thank you Ginny, you know you can substitute the chicken for vegetables and it would be so good!
