I am making it for the third time today. It is very flavorful. Usually, I find baked potato soup to be a little bleh, but this soup tastes fantastic. I could eat it every day! Highly recommend with two thumbs up AND a full belly!

I like to use pepper jack instead of Monterey. I then roast extra garlic and use this and bacon for garnish.
