We have all had a Mexican Pizza from the big bell!
Well I decided to create my own Mexican Pizza with Sausage version because I think I could make it taste much better for half the cost and I was correct.
Why not Andouille sausage? My thoughts exactly!
This makes two large Mexican Pizzas with Sausage.
First, saute andouille sausage, and then cook your peppers and onions in the sausage grease.
Andouille “Mexican” Pizza
Prep Time: 20 minutes
Cooking Time: 25 minutes
Total Time: 45 minutes
Servings: 4
Ingredients:
4-9 inch flour tortillas
½ lb. Andouille sausage
1 small can of pinto beans
1 cup cheddar cheese grated
1 cup jack cheese grated
1 small white onion diced
½ green bell pepper diced
1 bunch of green onions
½ of large tomato
2 cloves garlic minced
1 tsp. creole seasoning
1 tsp. chili powder
1 tsp. cumin
1 tsp. onion powder
1 tsp. garlic powder
1 tbsp. cooking oil
sour cream for garnish
Directions:
Mix all seasonings into a bowl and divide. Dice Andouille sausage into ½ cubes and set aside. Dice bell pepper, onion and garlic; divide into two bowls and set aside. Heat oil into skillet on medium high heat; cook Andouille sausage for 6 minutes, add bell pepper and onion sauté for 6 more minutes, add garlic sauté 2 minutes more then add ½ of the spices. Rinse and drain pinto beans and pour into blender, add the other half of spices and vegetables to the blender. Blend until creamy, pour into small pot and heat for five minutes stirring occasionally.
Assemble:
Line a baking sheet with foil and spray with nonstick cooking spray. Lay two tortillas down spread each shell with ½ cup of the beans. Place the sausage vegetable mixture on top of the beans. Sprinkle ¼ cup of cheese on each shell. Top with second shell spread top of shell with ½ cup of beans each, and sprinkle with remaining cheese. Top with have of seeded tomato and green onions. Bake at 350 degrees for 20 minutes.

Wait the vegetables were mixed with the beans. So is it the veggie bean mix on top of the sausage? Or is it supposed to be a sausage veggie mix on top of whole beans?

Hello Alonzii,
The vegetables are divided when chopped between the andouille mixture and then half goes into the beans uncooked. The veggies in the beans are completely mixed up. The veggies with the andouille mixture are sauteed. Please let me know if you need any more help.
