Chinese Chicken Salad


Description

Roasted chicken, crispy lettuce, cabbage, with an orange marmalade vinaigrette makes this quick and easy Chinese Chicken salad my go to meal.

Ingredients

3 cups roasted chicken breast, shredded

3 cups green leaf lettuce, chopped

1 head Napa cabbage shredded

1 medium bag of coleslaw, about 3 cups

1/2 cup scallion, chopped

1/2 cup almonds, sliced

1/2 pack of wontons, fried

1 cup cooking oil

chow mein noodles, fried to garnish

For the Vinaigrette:

1/2 cup extra virgin olive oil

4 tablespoons soy sauce, low sodium

4 tablespoons honey

3 tablespoons rice wine vinegar

2 tablespoons red wine vinegar

2 tablespoons hoisin sauce

2 tablespoons sesame oil

2 tablespoons orange marmalade

2 teaspoons garlic, minced

2 teaspoons ginger, minced

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder


Instructions

Heat oil over medium heat, fry wontons until light brown, drain, and set aside.

Add vinaigrette ingredients to a lidded jar, shake well.

Toss shredded chicken with around 2 tablespoons of vinaigrette.

Wash and spin all salad greens until completely dry.

Add greens to a large bowl top with chicken and remaining ingredients.

Serve with extra vinaigrette plus wontons and chow mein noodles.


Notes

The salad can be tossed with the vinaigrette if serving immediately. Otherwise,  I would suggest you wait until you’re ready to serve to toss the salad with the vinaigrette, top with wontons, and chow mein.
