Fiesta Fries

Ingredients

Scale
  • 4 Idaho Potatoes, washed, peeled, cut
  • 1 pack of bacon
  • 2 chicken breast
  • 2 teaspoon creole seasoning
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder
  • 1 teaspoon crushed oregano
  • 1 teaspoon black pepper
  • 1 lemon, zested, juiced
  • 1 lime, juiced
  • 3 cup sharp cheddar cheese, grated
  • 1 jar of jalapenos, sliced
  • 1 tomato, seeded, diced
  • 3 stalks of green onions, sliced
  • 1/4 c. red onion
  • guacamole (recipe below)
  • extra virgin olive oil
  • sour cream to top

For the Guacamole:

  • 2 avocados
  • 1 Serrano, seeded, chopped
  • 1 lime, juiced
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup red onion, chopped
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat oven to 375 degrees
  2. Wash, peel and slice potatoes into about 1/2 inch slices. Soak in cold water for about 30 minutes. Drain, rinse and dry well. Heat a pot half full with cooking oil to 360 degrees.
  3. Place fries in hot oil in batches and cook for about 10-12 minutes, until fries are golden brown. Remove from pan, drain on paper towels and sprinkle lightly with salt.
  4. Rinse chicken and pat dry. Season chicken with all the seasonings, lemon juice and zest and lime juice. Add about 2 tablespoons of olive oil to the chicken and mix well. Refrigerate chicken until ready to use.
  5. Place bacon on a baking sheet and bake at 375 degrees until nice and crispy about 20 minutes. Remove from oven and drain on napkins.
  6. In a skillet add a couple of tablespoons of extra virgin olive oil over medium heat. Add chicken to pan and cook for about 6-7 minutes per side, until chicken is no longer pink and cooked through. Remove from pan and allow chicken to rest, then chop chicken into bite size pieces.

To Assemble:

  1. Pre heat oven to broil. Place fries on a baking sheet, top with cheese, chicken, crumbled bacon, jalapenos. Broil about 5 minutes until cheese is melted. Remove from oven, top with tomatoes, green and red onion, guacamole and sour cream.

For the Guacamole:

  1. To prepare the guacamole, cut avocado in half, with a spoon scoop out the avocado. Place avocado in a bowl, all remaining ingredients and mix well with a fork.
