Crispy Bites of JOY!
These are Big Goo approved. And he doesn’t like salmon as I have mentioned in the past. He described them as crispy bites of spicy joy! Yep, his words, not mine!
If you’re not a big fan of salmon you can use white fish, shrimp, tuna, or crab.
These will turn out great no matter what fish or seafood you use, just try them and you will be addicted.
If you don’t like panko bread crumbs feel free to substitute with Italian bread crumbs. We’re going for the big crunch people!
Just a golden bite! I cook these in butter, yes butter and extra virgin olive oil. You can use all olive oil if you like.
Time to EAT! Don’t forget some extra hot sauce on the side. Poor baby girl, being allergic to seafood is just not fun…
Mini Salmon Croquettes with Creamy Avocado Sauce
Prep Time: 10 minutes
Cook Time: 6 minutes
Total Time: 16 minutes
Servings: 10 mini croquettes
Ingredients:
2 salmon fillets, boneless, skinless
1 tablespoon creole seasoning
1/2 tablespoon black pepper
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/4 teaspoon cayenne pepper (optional)
1 green onion, chopped
1/4 cup white onion, chopped
1 egg, beaten
3 tablespoon panko bread crumb
butter to cook
extra virgin olive oil to cook
dredging station (recipe below)
avocado cream sauce (recipe below)
For the Dredging Station
2 eggs, beaten
2 cup panko bread crumb
1 cup flour
1 teaspoon black pepper
1 teaspoon creole seasoning
For the Avocado Cream
1 avocado
1/2 cup mayonnaise
1 tablespoon of hot sauce
1/2 lemon juiced
2 tablespoon relish
1/4 teaspoon black pepper
pinch of salt
Directions:
Cut salmon into 1 inch chunks, place all ingredients including salmon into food process, chop well. Place mixture into the refrigerator until ready to use.
Prepare dredging station by mixing the seasonings well. In 3 separate bowls add flour in one, panko, and beaten eggs. Sprinkle seasoning blend in all 3 bowls.
Gather a heaping tablespoon of salmon mixture and form into a little patty. Dredge patty in flour, egg, panko. Repeat until all patties are dredged.
Heat a skillet over medium heat. Add 2 tablespoonfuls of olive oil, and 2 tablespoonfuls of butter to pan. Place a few patties into pan and cook for about 2-3 minutes per side. Please wipe pan clean between batches and repeat with more oil, more butter.
To prepare avocado cream, add all ingredients to blender and mix until nice and creamy.

If subbing shrimp how much would you recommend? Also I have haddock fillets that are frozen possibly three of them? Husband does not do salmon and these look amazing so I really want to figure out how much fish/shrimp to sub. As always, you offer great recipes!

Hello Kandy I would say about 1 lb of seafood would be a great substitute. About 2-3 fillets would work.

I became allergic to shellfish at the ripe age of almost 40, after eating it all of my life!! So hard when it was, and still is my favorite food, but I know that I will die if there is even so much as a cross contamination. Still wondering why I couldn’t have developed an allergy to nicotine….LOL..This does sound pretty close to crab cakes and thank you for sharing! Have you been allergic to shellfish your entire life? I sure miss it!!!
