Get to Grilling People!
It’s that time of year and I don’t know about you, but I couldn’t wait to start grilling. I love the thought of cooking and eating outdoors. Although it’s over 100 degrees, yes people, over 100 degrees…lol…they say it’s a dry heat….they lie.
It’s just plain hot!
But don’t be alarmed, my Grilled Pork Chops with Pineapple Mango Salsa will help you forget about how hot it really is outside. Well, at least for a few minutes.
This dish all started with Baby Girl wanting some cinnamon chips. I needed to create a salsa to eat with the chips and the Pineapple Mango Salsa was born.
But hey, salsa is not filling at all, so bring on the pork cutlets.
I needed substance people, and that is why I chose to grill some marinated pork cutlets to eat with the wonderful salsa.
This dish turned out excellent. It’s nice and light and the perfect dish for an outdoor grilling mama.
Grilled Pork Cutlets with Pineapple Mango Salsa
Prep Time: 10 minutes
Cook Time: 6 minutes
Total Time: 16 minutes + marinating time
Ingredients:
8 pork cutlets
3 tablespoons extra virgin olive oil
1 tablespoon creole seasonings
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 tablespoon black pepper
1/2 tablespoon Mexican oregano, crushed
2 teaspoon paprika
1 lemon, zested, juiced
1 lime, zested, juiced
Pineapple Mango Salsa (recipe below)
rice (optional)
For the Pineapple Mango Salsa
1 cup pineapple, diced
1 mango, diced
1 lime, zested, juiced
1 lemon, zested, juiced
1/2 bell pepper, diced
1 shallot, diced
1/2 teaspoon black pepper
1/2 teaspoon creole seasoning
Directions:
To prepare salsa, mix all ingredients in a large bowl and chill until ready to serve.
Rinse pork cutlets, pat dry. Coat cutlets with olive oil and all remaining ingredients. Mix well and allow to marinate in the refrigerator for at least one hour.
Remove from refrigerator, bring to room temperature before grilling. Grill for 3-4 minutes per side. Top with Pineapple Mango Salsa. Enjoy!
