Hello Nicole, it&#039;s just the way my family has always made it. I have substituted heavy cream for the evaporated milk. If you use wine it will change the outcome of the recipe. I think the milk adds moisture to the stuffing. I never asked my mother why evaporated milk, I just know it always tasted delicious.
