Yes, it’s St. Patrick’s Day and the brisket is being cooked by the boatload!
But, after the parties ends and the guest leave, what are you going to do with all that leftover brisket?
I say, bring on the cheese, potatoes, and jalapenos!
My Cheesy Jalapeno Slow Cooker Brisket Fries are perfect for the day after the festivities.
I made my brisket in the slow cooker, but note, regardless of how you cooked your brisket, it will work for this dish!
I diced my brisket up into 1 inch chunks, lightly fried it in a little olive oil and that’s pretty much it!
Now cook up some fries, and top those babies with lots of brisket and all the toppings you can think of!
I used lots of jalapenos, cheese, and green onions. Then I placed it under the broiler to melt the cheese.
All done and ready to eat!
Cheesy Jalapeno Slow Cooker Brisket Fries
Prep Time: 10 minutes
Cook Time: 5 hours
Total Time: 5 hours 10 minutes
Ingredients:
1 4lb beef brisket
1 1/2 cups beef broth
1 bell pepper, diced
1 onion, diced
1 stalk celery, diced
3 cloves garlic, minced
2 tablespoons brown sugar
2 tablespoon Worcestershire sauce
1 tablespoon creole seasoning
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
extra virgin olive oil
flour
For Cornstarch Slurry:
1 tablespoon cornstarch
1 tablespoon of water
For Brisket Fries:
2 cups diced brisket
1 lb frozen french fries, cooked according to package directions
jack cheese, grated
sharp cheese, grated
pickled jalapenos
green onions
sour cream
avocado
Directions:
Rinse brisket well under cold water, discard all seasonings packets that came with brisket.
Mix seasoning blend and set aside.
Place flour on a plate and season with 1 tablespoon of seasoning blend. Coat brisket with olive oil, rub in well. Season brisket with seasonings, rubbing in well.
Place brisket in flour and lightly coat. Add about 2 tablespoons of olive oil to pan and brown brisket on all sides, about 3-4 minutes per side, transfer to slow cooker.
Add about 1 tablespoon of olive oil to pan, add bell pepper, onion, and celery, saute for about 5 minutes.
Season with 1 tablespoon of seasoning blend and mix well. Add garlic cook 1 minute more.
Add broth to pan to scrap up brown bits from the bottom of pan, transfer mixture to slow cooker, covering brisket.
Cook at 5 hours on high or 8-10 hours on low, until brisket is tender.
Remove brisket from slow cooker, transfer pan juices to a pot, bring to boil and add cornstarch slurry. Reduce heat and simmer to thicken.
Cook fries according to package directions. While fries cook, dice brisket into 1 inch chucks, lightly fry in a little olive oil until crispy.
Top fries with brisket, cheese, jalapenos, and place under broiler for about 5 minutes are until cheese melts. Top with sour cream and avocado. Drizzle gravy on top if desired.
