Hi Ann, yes although I use Creole Seasoning I also pretty much add my own blend to the creole seasoning as well. I would suggest if you’re using Emeril’s Essence which is delicious, start with that blend and then adjust the seasoning as needed. I love spice and use a lot of it but I would start with about 1-2 tablespoons of Essence and that should be plenty. But taste and adjust to your liking. Hope this helps!
