I use a nonstick baking sheet so that doesn’t happen. I’ve been there and had to pick the skin off the pan to eat it because that’s the best part.

Creole seasoning is a southern spice used in almost all southern cooking. Here’s a link to purchase it. Most grocery stores carry creole seasoning. http://astore.amazon.com/creolconte-20
In regards to lime juice, I’ve never heard that before and I cook with lime juice all the time. I’ve never tasted any bitterness by cooking it.
