Slow Cooker Bean Soup with Andouille Sausage

Ingredients

Scale
  • 1 lb andouille sausage, sliced
  • 4 cups northern white beans, organic, canned, rinsed, drained
  • 4 cups chicken broth, low sodium, organic
  • 2 cups red salsa
  • 1 cup carrots, frozen, diced
  • 1/2 cup red onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup Italian parsley, minced
  • 2 teaspoons creole seasoning
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • cooked rice

Instructions

  1. Drain canned beans and rinse well, drain again.
  2. Rinse sausage, slice into 1/2 inch thickness.
  3. Place all ingredients into slow cooker, mix well, cook on high for 4 hours.
  4. Serve with hot rice
