Hi Charis you could use seasoned salt like Lawry's but be careful because it could be salty. I chop the green onions and add them to the meat. Yes I've made this for over 200 people before. Also you might want to bake the meatballs then put them in the slow cooker if you're making a large amount. 350 degrees for about 30 minutes. Then you can make up your gravy and finish them in the slow cooker.

I have not used creole seasoning. I am not a huge fan of spicy foods. Could I just drop that or use something else? Also green onions are list in the ingredients, but not in the directions. At one point do I add them?
Have you ever increased the size of the recipe to feed a crowd at a potluck?

I'm sorry about your experience Tom. But, I've made this recipe numerous times and it's impossible for the gravy to turn out watery if the recipe is followed correctly. If you omitted the cornstarch at the end and/or failed to cook the meatballs another hour which allows the cornstarch to thicken, you will have watery gravy. Otherwise, the gravy should been thick, just like my recipe. Another idea you can try when slow cooking is remove the lid the last 30 minutes of cooking and this also allows the gravy to thicken.

I made these meatballs for dinner last night and, with amount of effort involved, I didn't find this recipe to my liking. The gravy was light water. just didn't work for me.

Hello Betsy, you can add a slice or two of grain free bread or substitute with grain free crackers. I believe I saw grain free bread in the freezer section at the grocery store. Also, I am glad you asked this question. I have a second blog and I just had it redone so I am going to start posting more recipes and I will definitely start adding substitutes for grains in my recipes and testing them out. I was posting mostly meatless meals but I will make sure I add a few with meats but still remaining healthy and light. Here's a link. http://notquiteavegan.com/

Everything you make looks so scrumptious. Your pictures are always gorgeous. I feel like I can reach out and chow down on those meatballs! I wanted to tell you, I used your sweet potato pie recipe last Thanksgiving and it was a big hit. I am now in charge of sweet potato pie making for the holidays. Your blog is very much appreciated!
