Fried Corn Dip with Bacon

Ingredients

Scale
  • 3 cups organic corn
  • 2 cups sharp cheddar cheese, grated
  • 2 cups mozzarella cheese, grated
  • 1 cup peperoncini, drained
  • 1/2 cup cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 6 slices of bacon, diced
  • 1/2 cup green onions, sliced
  • 1 teaspoon creole seasonings
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 350 degrees.
  2. Add diced bacon to a pan with a little olive oil.
  3. Cook bacon until crispy about 7 minutes.
  4. Add corn to bacon and bacon grease, season with spices.
  5. Cook for about 5-7 minutes.
  6. Add bacon/corn and all remaining ingredients to a large bowl.
  7. Mix well and place in a greased casserole dish.
  8. Bake at 350 degrees for about 20 minutes, broil 3 minutes to brown the top.
