The wonderful people at Cabot Cheese sent me CHEESE for recipe development.
My Baked Chili Cheese Dogs is the perfect recipe for the cheese-heads of the world.
I don’t think I have to give you a detailed description of how much I love cheese?
I don’t just love cheese, I love, love, love, super LOVE cheese.
I love cheese so much I have cheese dreams!
Yes, I dream in cheese.
The dreams always consist of me owning cows, goats, and a farm and creating an unlimited supply of cheese.
I could live that life!
I wanted to create a recipe that would accomplish two missions.
First, I wanted to showcase the wonderful Cabot cheese!
Secondly, I wanted to showcase my love of delicious cheese!
MISSION ACCOMPLISHED!
When I was a young child my mother would always make baked hot dogs.
She would wrap the hot dogs in bacon and cook them until they were nice and crispy!
Sometimes she would go a step further and split the hotdogs, put in a chuck of cheese, then wrap them in bacon.
You’re talking about pure hotdog deliciousness.
I decided to take my favorite chili recipe and I added canned pinto beans to the chili.
Next, I top the hotdogs with loads of Cabot cheese and baked these babies until they were nice and toasty!
Let me explain what you’re about to eat.
You have spicy chili, a high quality hot dog, excellent cheese and did I mention we slightly buttered the buns.
Yep, my little secret, a little butter and a lot of cheese will take you to great food places people!

- Prep Time: 5 minutes
- Cook Time: 30 minutes
- Total Time: 35 minutes
- Yield: 8 Baked Chili Cheese Dogs 1x
Ingredients
- 8 hot dogs
- 8 hot dog buns
- 3 cups chili
- 3 cups Cabot cheese, grated
- 3 tablespoons butter, unsalted
- green onions to garnish
Instructions
- Preheat oven to 375.
- Grease baking pan and place the hot dog buns in the bottom.
- Butter the sides and top of the buns.
- Top buns with hotdogs, chili, and finish off with lots of cheese.
- Tent with foil and bake at 375 degrees for 30 minutes.
- Garnish with green onions and serve immediately.

if I wanted to wrap the hot dogs in bacon , I will have to bake or grill these first, before cooking in the oven on buns, right??
Yes because the bacon would not cook in time and it wouldn’t be crispy.
What hot dogs do you use?
Hi Ericka! I love Nathans, Hebrew National, pretty much any high quality hot dog would work. Sometimes I use turkey dogs as well. Enjoy
If I make these up the night before, will they be soggy when they are baked the next day.
Hello Cheryl, You can do one of two things. You can prepare the chili the night before as the dish only takes 5 minutes to put together. The chili will reheat in the oven as it bakes. If the chili is cold then yes you can prepare them the night before and cover them in saran wrap to prevent the bread from drying out.
