My Loaded Potato Casserole is not only easy to make it’s delicious y’all!
Heads up! Double the recipe and use a 9×13 casserole dish instead of a 9×9.
I didn’t make enough potatoes and it was gone in five minutes.
Real simple ingredients people!
Yukon gold potatoes, lots of bacon, cheese, sour cream, mayo, and green onions.
Of course lots of spices. You must always season your food well.
Whatever you do don’t forget the Old Bay seasoning.
I feel like it gives the casserole an added layer of flavor that really takes this dish to another level.
Y’all know how much I love spices. So yeah, season it well.
My food critic daughter Summer told me to tell ya’ to add about a 1/2 cup of pickled, diced jalapenos.
This kid loves spicy food.
She said because I failed to add jalapenos inside of the casserole she’ll just top her portion with jalapenos.
Then she added hot sauce too!
Summer’s been eating spicy food before she could talk well thanks to my young nephew feeding her hotlinks.
I’ll save the story for another day.
All I know is I came home from work and Summer and my nephew were sitting on the floor, he was peeling the skin off of the hotlinks, chewing up the sausage, and feeding it to Summer.
She was smiling and crying at the same time from the heat and never stopped eating them.
I screamed at my sister/babysitter who was sleep on the couch and ran to give my baby some cold milk. lol
I fired my sister that day!
Anyway, enough of my family drama.
Add the jalapenos if you like spicy food
You can also add green chilies for a milder heat.

Ingredients
3 lbs Yukon gold potatoes, peeled if desired, cut into 2 inch chunks
12 slices bacon, crispy, crumbled
1 1/2 cups sharp cheddar cheese, grated
1 1/2 cups jack cheese, grated
1 cup mayonnaise
1 cup sour cream
1/2 cup green onions, diced
1/2 cup jalapenos, picked, diced (optional)
4 tablespoons garlic herb butter, melted
1 tablespoon garlic, minced
1 teaspoon creole seasoning
1 teaspoon old bay seasoning
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Instructions
Preheat oven to 375 degrees.
Reserve half a cup of each cheeses and set aside.
Place bacon on a cookie sheet and bake until crispy according to package directions.
Remove from pan and drain on a paper napkin.
Save a couple of slices of bacon to top the casserole with.
Rinse and scrub potatoes. Peel if desired. Cut into 2 inch chunks, place inside of a stock pot and boil until tender around 15-20 minutes.
Drain potatoes and set aside.
Mix seasoning blend together.
Mix all ingredients together. Place into a greased 9 inch casserole dish. Top with remaining cheese, extra bacon, and extra green onions.
Bake at 375 degrees for about 20 minutes. Broil for a few minutes.
Serve warm.
