It’s finally starting to heat up in this desert! We had such a cold extended winter in Las Vegas.
When it gets hot I like to prepare easy dishes that keeps me cool.
My Fruit Salad with Strawberry Pineapple Cheesecake Dip is the perfect cool down snack.
First, I love fruit! The more fruit on this tray the merrier.
I went with melons, berries, pineapple, and grapes.
Use whatever fruit you enjoy.
Whenever I make fruit trays I always go with the fruit that’s on sale.
Fruit can be really expensive.
Pick what’s on sale and every week you can change it up so you want get bored eating the same ole’ fruits.
My baby girl Summer is a big blueberry fan so I always include blueberries in my fruit tray.
I on the other hand love strawberries. So those are the two fruits I try to always include.
My baby brother’s coming to visit and he’s a melon lover.
I went with a Tuscan and lemon drop melon for Dean.
Dean also loves watermelon but I couldn’t find a seeded one.
I am gonna head over to Trader Joe’s and find Dean a seeded watermelon for next week.
The fun part about making fruit salad is making different dips!
Today I went with a strawberry pineapple dip.
I love this dip because it actually taste like cheesecake.
I used cream cheese, strawberry jam, confectioners sugar, and strawberry extract.
Don’t forget pineapple juice to thin. Use as little or as much as you prefer.
I like my dip kinda thick.
Whip everything together until it’s nice and fluffy.
It really is that simple.
Fruit Salad with Strawberry Pineapple Cheesecake Dip

1 8 ounce package cream cheese, room temperature
1/4-1/2 cup confectioners sugar
1/2 cup strawberry jam
1/4 cup pineapple juice
1/2 teaspoon strawberry extract
Mix all ingredients together until whipped.
Start with 1/4 cup confectioners sugar.
Add more if desired.
You can create individual fruit bowls containing your favorite fruit off of the tray and top with dip.
A little granola on top is also delicious for an added crunch.
