I have eaten dirty rice or as we call it Rice Dressing since I was a baby. I don’t ever remember a time not eating rice dressing.
I make this for my family every holiday, and remember this really does taste better the next day.
Sauteing the vegetables in olive oil is a must, do not add garlic until last you don’t want to risk burning it.
This is what you end up with once all the vegetables and meat have been cooked. Looks good, I know.
Add parsley last after adding cooked rice and some gizzard cooking liquid if needed.
This is the finished product and yes, I ate it right out the bowl with a spoon, I just couldn’t help myself.
Creole Dirty Rice

1 lb ground pork
1 small pack of chicken gizzards
1 bell pepper, diced
1/2 white onion, diced
1/2 red onion, diced
4 stalks celery, chopped
4 cloves garlic, chopped
1 bunch parsley, chopped
1 bunch of green onions
1 can beef broth-small
1 tablespoon. creole seasoning
1/2 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoon paprika
1 teaspoon cayenne pepper (optional)
4 cups cooked rice
2 tablespoons extra virgin olive oil
Rinse chicken gizzards and add to a stock pot, cover with water, cook over medium heat for about 1 1/2 hours, adding more water if needed.
While gizzards cook, in a medium pan, add olive oil and heat over medium-high heat, add bell peppers, onions, and celery. Saute for about 5 minutes then add garlic and cook 1 minute more.
Add ground pork, break up, add seasonings and saute until browned and cooked through. Turn pork-vegetable mixture off heat and set aside.
When gizzards are fork tender, remove from heat, drain reserving gizzard liquid. Add gizzards to a food processor and chop lightly.
Add chopped gizzards to pork-vegetable mixture and heat over medium heat, mix well. Add one can of beef broth and cook for about 5 minutes.
Transfer mixture to a large bowl, add rice a little at a time until all rice has been added, mixing well. Add some gizzard cooking looking if mixture is too dry.
Add chopped parsley and mix well.
Check seasonings, and enjoy.
