Just Lemon!
A couple of days ago I made Quick Lemon Lover Baked Doughnuts, well my family wants more Lemon, so here we go.
Lemon Loaf Cake, just yummy!

Zest first, then juice your lemons.
This lemon glaze is so good, you can use this on cookies, cakes, donuts. Just add about 1/2 cup more of powdered sugar for cookies and it’s the best cookie glaze I have ever made.
Put a bow on it and give it as gifts, who wouldn’t want this for a present.
Quick Lemon Lover Baked Doughnuts
Prep Time: 15 minutes
Cooking Time: 25 minutes
Total Time: 40 minutes
Servings: 4 mini loaf cakes
Ingredients:
1 box lemon cake mix
1 small packet jello instant lemon pudding mix
2 lemons, zested and juiced
1 stick of butter, melted
1 c. whole milk
1 tsp. vanilla
2 eggs
4 mini loaf pans
lemon glaze
For the Lemon Glaze:
2 lemons zested and juice or 4 tbsp. lemon juice + 1 tbsp. zest
3 1/2 cups of powdered confectioners sugar
Directions:
In a large mixer bowl, add lemon cake mix and instant lemon pudding mix add zest from two lemons to mix and mix for about 30 seconds. Add lemon juice make sure there are no seeds, melted butter, vanilla, milk and eggs.
Lightly spray mini loaf pans with cooking spray. Divide batter into pans evenly.
Bake mini loaves at 325 for 20-25 minutes, remove from oven, poke small holes in the cake. Spread a thin layer of glaze over hot cake.
Allow cake to cool about five minutes, remove from pan, place on a cooling rack for 5 more minutes. Coat cake with second layer of glaze. Allow cake to cool about 5 more minutes.
To prepare the lemon glaze, mix lemon juice, zest and powdered sugar, whisk until smooth.
Note: Cake can also be made in a bundt pan, bake at 325 degrees for 60 minutes.

This is the best lemon flavor ever! But where did I go wrong? Used 4 mini pans,checked ingredients,check oven temp. it seems that I did it right,but before the frist20 min. were up they were coming over the top and no where near done. So with an additional 45 min. baking took out put glaze on – waited a good 5 min.- will not come out of panes – let set until cold – came out but have a undone taste. Like I said the best lemon ever, please help.
Hello Tumbleweed, Some times I mix up my own version depending on what mood I am in. I like Tony’s but if you use Tony’s don’t add any salt to your food. Zatarains is another great one which I love. Slap Yo Mama is good as well, just limit the salt. Emerils made an excellent creole seasoning. I am not sure if he still sells it.
Thanks Peggy, I think she is feeling a lot better she had food request today, smothered ox tails or pasta with prosciutto and asparagus. LOL, I told her I guess your feeling better since you don’t want to eat chicken soup. She is so funny, she is definitely not a fast food kid. LOL
