Not those Taytos my Irish friends, OK, yes those Taytos too. I told you I love all food, so yes, I have had many a bag of Taytos.
If you never had a crispy Tayto chip from Ireland, salt and vinegar and cheese and onion are my favorite, they are so delicious, I suggest you have some shipped from Ireland, it’s worth it!
But the Tayto I am talking about today is the sweet tayto, which is what my Baby Girl used to call them before she could pronounce them sweet potatoes.
Who doesn’t love sweet potatoes? Well, I love sweet potatoes and so does my family. We will eat sweet potatoes any way but raw.
Let me rephrase that, I have had raw sweet potato juice, and that too was delicious.
I love sweet potato pie, mashed sweet potatoes, fried sweet potatoes, baked sweet potatoes… I think you get my point.
Well today I decided to make some sweet potato hash. I love hash and one of my favorite hash is the Texas Hash that I always make for my family. But today, the sweet potato is the star of this dish.
I fried my mini meatballs in bacon grease, YES, bacon grease!
I did drain half the bacon/sausage grease to saute my veggies in.
Isn’t she lovely…isn’t she wonderful (in my Stevie Wonder voice)?
I served my Roasted Sweet Potato Hash with a side of toasted sourdough bread.
Let’s Get Ready To Rumble…….!!!! Time to EAT!
Roasted Sweet Potato Hash with Sausage and Bacon
Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour
3 large or 5 medium sweet potatoes, peeled, diced into 1/2 inch cubes
6 slices thick cut bacon, diced
2 Italian Sausage links, casing removed
1 c. grated cheddar cheese
1 c. bell peppers, diced
1 small red onion, diced
3 cloves garlic, minced
1 tsp. black pepper
1 tsp. creole seasonings or seasoning salt
1 tsp. garlic powder
1 tsp. onion powder
extra virgin olive oil
green onions to garnish
Pre-heat oven to 400 degrees
Remove sausage from casing and take teaspoonful pieces and roll into mini meatballs and set aside.
In an oven proof pan spread out sweet potatoes in one layer. Add 2 tablespoons of extra virgin olive oil and all the seasonings. Toss well and bake for about 30-35 minutes. Remove from oven and set aside.
Turn oven to broil.
While the sweet potatoes roast in a medium skillet over medium heat, add 1 tablespoon of olive oil, add bacon and cook until crisp, remove bacon from pan, place bacon on napkins to drain oil.
Reserve bacon cooking oil in pan.
Add sausage to bacon grease and fry for about 5 minutes, turning occasionally or until browned. Remove sausage to napkin and discard half of pan grease. Add onion and bell pepper to pan greases and cook 5 minutes, add garlic and cook 1 minute more.
Add sweet potatoes to pan and cook for about 5 minutes, tossing lightly. Add half of bacon and sausage on top of sweet potatoes. Sprinkle all the cheese and place under broiler for about 3-5 minutes.
Remove from oven and top with remaining sausage, bacon and green onions and serve.
