It’s sandwich eating time up in here! O.K. here’s the run down on what’s happening in my house.
Big Goo’s on vacation, and since he’s king of sandwiches I decided to make him a big ole sandwich to snack on for a couple of days.
Normally, Big Goo sandwiches consist of roasted turkey and cheese with a little light mayo and that’s it!
Yep, I like to keep the sandwiches simple most days, but this is a special occasion people, and what better way to bring on the festivities than with a Creole Muffuletta.
I purchased fresh bread just baked today, and lots of muffuletta spread from my deli.
I removed some of the filling out the bread, because Big Goo likes it that way.
I told you we’re celebrating so I will allow him to have his way for the next couple of weeks.
It’s time to assemble the sandwich, layer loads of muffuletta spread on bottom bread, you want this to soak in the bread.
Then top the spread with loads of deli meat and cheeses. Use whatever deli meats you prefer, I used black forest ham and Geno salami because that’s what Big Goo likes.
Make sure you finish the top bread off with more muffuletta spread so we have a flavor explosion in every bite!
Press the sandwich down, wrap in foil and bake!
I prefer my sandwich not baked, but again, I repeat, it’s all about what Big Goo likes this week, which is always a hot sandwich.
It’s time to eat people, and I am not sure how long this catering to Big Goo thing is going to last, I give it about 24 more hours and I’ll be done!

Easy Baked Creole Muffuletta Sandwich
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4
Ingredients:
1 9 inch round bread, sliced in half
1 lb Geno salami, sliced deli thin
1 lb black forest ham, sliced deli thin
12 slices provolone cheese, sliced
1 1/2 cups olive spread
Directions:
Preheat oven to 375 degrees.
Cut bread in half lengthwise, remove about 1/4 inch of bread filling to create a small well.
Fill bottom half of bread with 1/2 cup of olive spread, top with half of the salami, ham, cheese, olive spread, salami, ham, cheese, ending with remaining muffaletta spread.
Place top bread layer on sandwich, press down, wrap in foil and bake at 375 degrees for about 20 minutes.
Remove from oven, cut into four pieces and serve warm.
