I love Frittatas because one, it’s a simple dish to create, and two, you can turn it into whatever you like.
You can use any type of meat and/or vegetable and make your frittata extra special.
It’s one of those dishes that is perfect for getting rid of extra veggies at the end of the week.
I used tomatoes, peppers, onions, sharp and jack cheese to create this beauty. I think the key to a perfect frittata is to saute the veggies before adding the eggs.
I also like to use different cheeses, goat cheese would be perfect with this dish. I went with Jack because I was all out of goat cheese, but use whatever cheese you prefer.
Tip number two, don’t stir the frittata once you add the eggs to the pan, you want to get a nice crust on the bottom and the key is to not stir the eggs.
Bake for about 15-20 minutes at 350 degrees, allow the frittata to rest before serving.
Garnish with more Italian parsley and enjoy!
