Quick and Easy Roasted Chicken Tortilla Soup

Ingredients

  • 3 cups roasted chicken, shredded, skin removed
  • 2 cups red salsa
  • 2 cups green salsa
  • 8 cups chicken broth, low sodium
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon oregano, dried, crushed
  • 2 cloves garlic, minced
  • 1/2 cup cilantro, minced
  • 1 lime, juiced

For the Toppings:

  • grated cheese
  • diced avocado
  • tortilla strips
  • sour cream
  • tomatoes

Instructions

  1. In a soup pot over medium heat add all ingredients, minus chicken, cilantro, and lime, bring to boil, reduce heat and simmer for 10 minutes.
  2. Add chicken and simmer for 10 minutes more. Stir in cilantro and lime juice.
  3. Serve in bowls with loads of toppings.
  4. Enjoy!
