I must inform you about one of my favorite Mexican dishes, Roasted Chicken Tortilla Soup!
This isn’t just my favorite tortilla soup, it’s the best tortilla soup I’ve ever eaten.
You can make tortilla soup numerous ways, you can make my Smoked Chicken Tortilla Soup.
Although, it’s not a quick recipe because you have to smoke the chicken first.
It’s definitely worth the extra step.
Not everyone owns a smoker so I wanted to recreate the recipe in a manner that would be possible for all to enjoy the taste and flavors of Tortilla Soup.
This Roasted Chicken Tortilla Soup is my new best soup friend!
This has to be the simplest, quickest, soup I’ve ever made.
I took red and green salsa, I went with chunky red for texture and smooth green salsa. I added a few spices and used a store bought roasted chicken.
Using jarred salsa is perfect for this Roasted Chicken Tortilla soup because my family don’t like to bite into super chunky veggies and using salsa removed that issue from my soup pot!
Store bought chicken also saves time, I always pick up roasted chicken from Sam’s Club or Costco so this makes life that much easier.
Finish the Roasted Chicken Tortilla Soup off with fresh cilantro and lime juice, and it’s time to eat!
My Roasted Chicken Tortilla Soup has to be the simplest soup ever made!
Did I mention it takes less than 30 minutes, AND, this is actually a low fat soup, but you can’t tell because the flavor is beyond delicious!
This soup is so good, I spent most of my time just drinking the broth. The broth can be used as a base for so many other wonderful soups.
Try adding corn and beans to this Roasted Chicken Tortilla Soup and really take this soup to another level.

Ingredients
- 3 cups roasted chicken, shredded, skin removed
- 2 cups red salsa
- 2 cups green salsa
- 8 cups chicken broth, low sodium
- 1 teaspoon chili powder
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon oregano, dried, crushed
- 2 cloves garlic, minced
- 1/2 cup cilantro, minced
- 1 lime, juiced
For the Toppings:
- grated cheese
- diced avocado
- tortilla strips
- sour cream
- tomatoes
Instructions
- In a soup pot over medium heat add all ingredients, minus chicken, cilantro, and lime, bring to boil, reduce heat and simmer for 10 minutes.
- Add chicken and simmer for 10 minutes more. Stir in cilantro and lime juice.
- Serve in bowls with loads of toppings.
- Enjoy!
