Pan Roasted Salmon with Creamed Spinach Recipe

Ingredients

Scale
  • 4 salmon fillets
  • 2 tablespoons butter, unsalted
  • 1/2 tablespoon creole seasoning or seasoning salt
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon black pepper
  • 2 teaspoons paprika
  • 2 teaspoon dried thyme
  • extra virgin olive oil

For the Creamed Spinach:

  • 2 lbs spinach, frozen
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • 2 teaspoons black pepper
  • 2 teaspoons creole seasoning or seasoning salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • extra virgin olive oil
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to broil.
  2. Rinse salmon and pat dry.
  3. In a medium platter place salmon and coat each piece with about 1 teaspoon of olive oil on each side of salmon, rub in gently.
  4. Mix seasoning blend and sprinkle over each piece of salmon, coating both sides.
  5. Massage seasonings gently into salmon and set aside.
  6. Add more olive oil to pan over medium heat.
  7. Place salmon in pan, skin side down and cook for 5 minutes, don’t flip.
  8. After 5 minutes transfer pan to oven and broil for about 7 minutes basting with pan juices.

To Prepare Creamed Spinach:

  1. Add about 1 tablespoon olive oil and 2 tablespoons butter to large skillet over medium heat.
  2. Add spinach and cook for about 5 minutes, add spices and mix well.
  3. Mix cream and cornstarch together.
  4. Add cream to spinach and mix well.
  5. Fold in cheese and cook for about 5 minutes more.
  6. Serve with cooked salmon.
