First, I prepared my quick and easy Pepperoni Pasta Salad.
Think all your favorite pizza toppings turned into a pasta salad.
The key ingredient is lots of HORMEL® Pepperoni!
The more pepperoni the better in this easy, zesty, pasta salad!
Secondly, I prepared my all time favorite easy go to super cheesy Pepperoni Baked Pasta.
This is my daughter’s favorite dish to make for the family because it truly is a one pot meal!
She said she’ll be making this for all her friends when she goes off to college this summer.
You start off with lots of HORMEL® Pepperoni.
Then you make sure to have lots and lots of cheese.
A jar of your favorite store-bought pasta sauce and your favorite pasta and it’s time to bake this baby up!
I always dice half the pepperoni and then leave whole pieces to top my pasta off with.
It’s really up to you just make sure you use lots of pepperoni and lots of good cheese!
We made two quick and easy dishes both in under thirty minutes and it’s time to eat!

Pepperoni Pasta Salad
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 6-8
Ingredients:
1 box rotini pasta
1 pack HORMEL® PILLOW PACK® Pepperoni-Original
1 cup marinated artichokes, chopped
1 cup black olives, sliced
1 cup pimento stuffed olives
1 cup Parmesan cheese, grated
1 cup cheddar cheese, sharp, diced
1 cup mozzarella cheese, diced
1 hot house cucumber, sliced
1 red onion, diced
1/2 cup Italian Parsley, chopped
1 teaspoon black pepper
1 teaspoon creole seasoning
extra virgin olive oil
For the Vinaigrette:
1 cup extra virgin olive oil
1/3 cup rice wine vinegar
2 tablespoons apple cider vinegar
1 lemon, zested, juiced
1 teaspoon black pepper
1 teaspoon creole seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried, crushed, oregano
pinch of crushed red pepper
Directions:
Bring a large pot of salted water to boil. Add pasta and cook according to pasta box directions.
Mix vinaigrette ingredients into a large jar, shake well, and set aside.
Place all meat, cheese, seasonings, and veggie ingredients into a large bowl, mix well.
Drain pasta, rinse in cold water, drain again. Coat pasta with 1 tablespoon of olive oil, mix well, place into large bowl with other ingredients.
Pour vinaigrette over ingredients, mix well and chill for about 1 hour before serving.
Baked Cheesy Pepperoni Pasta
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 6-8
Ingredients:
1 pack HORMEL® PILLOW PACK® Pepperoni – Original
4 cups store-bought pasta sauce
1 lb rigatoni, cooked according to package directions
2 cups sharp cheddar cheese, grated
2 cups mozzarella cheese, grated
1 cup Parmesan cheese, grated
1 teaspoon creole seasoning
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
fresh Italian parsley to top
Directions:
Preheat oven to 400 degrees, Cook pasta according to package directions, drain, rinse with hot water, drain again and place into a large bowl.
Season pasta with spices and mix well
Mix cheese and reserve 1 cup to top pasta with.
Dice pepperoni in half and save about 1/2 cup to top pasta with.
Add cheese and pasta sauce to the pasta bowl, mix well.
Transfer to a greased 13X9 casserole dish. Top with remaining cheese and pepperoni.
Cover with foil and bake 20 minutes. Remove foil, broil for about 5 minutes.
Garnish with Italian Parsley and serve.
