I’m a California-raised girl from a Louisiana family and during the holiday season, I always put a West Coast spin on some of my favorite southern dishes.
Traditionally, my family makes this dish with sweet potatoes but we’re changing it up by using delicious butternut squash!
Butternut squash is one of the most popular winter squashes with a sweet and nutty taste similar to pumpkin, and a deep orange fleshy pulp.
With the addition of Farmer John® Classic Premium Bacon and Farmer John® Classic Pork Sausage Links, you’re in for a real special treat!
Being raised in California there have been two main staples in my life.
Farmer John products and shopping at Smart and Final.
My mama always cooked with Farmer John products when I was a kid and she still does to this day.
Farmer John’s Classic Pork Sausage Links are full of rich flavor and are tender and juicy.
I also love how the Classic Premium Bacon is naturally hardwood smoked.
So much flavor!
She is also the one who hipped me to Smart and Final. I’ve been hooked since.
My favorite child and adulthood sandwich is Farmer John Classic Premium Cooked Ham on white bread, with light mayo.
You don’t want to put too much mayo because Farmer John’s Classic Premium Cooked Ham is the key to the sandwich.
Now I’ve passed on these traditions to my young adult daughter.
It’s time to cook, y’all!
First, preheat your oven to 400 degrees Fahrenheit so we can roast up our butternut squash.
I find that roasting is the best way to cook squash because it brings out more flavor!
I coat the squash with extra virgin olive oil and a sprinkling of our spice blend.
Toss well, then roast for about 30-35 minutes.
While our squash is roasting it’s time to cook up some Farmer John Classic Premium Bacon and Farmer John Classic Pork Sausage Links.
Don’t forget to cook the bacon and sausage links according to the package directions. I always pan fry my sausage links until they’re nice and browned.
Toss the roasted butternut squash with the meat mixture, and then top with cheese.
Broil for a few minutes.
Garnish with a little green onion.
This makes an excellent dish for breakfast, brunch, or even as the main side dish for your holiday meal.

Roasted Butternut Squash Hash with Farmer John Classic Premium Bacon and Farmer John Classic Pork Sausage Links
Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour
Servings 6-8
Ingredients:
1 32oz. package Farmer John Classic Premium Bacon, diced into 1/2 inch chunks, and cooked according to package directions.
2 8 oz. packages Farmer John Classic Pork Sausage Links, diced into 1/2 inch chunks, and cooked according to package directions.
6 cups butternut squash, diced
6 tablespoons extra virgin olive oil
1 bell pepper, diced
1 small red onion, diced
1/2 bunch green onions, diced
3 cloves garlic, minced
1 teaspoon creole seasonings
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
Directions:
Pre-heat oven to 400 degrees Fahrenheit.
Mix seasoning blend and set aside.
Add butternut squash, 2 tablespoons of olive oil, the seasoning blend, toss and then roast for about 30-35 minutes.
In a medium skillet, add bacon and cook until bacon is crispy.
Remove bacon from the pan and place on a paper napkin to drain.
Add sausage to bacon grease and cook for about 5 minutes, turning occasionally or until browned.
Remove sausage from pan and drain on a paper napkin.
Remove half of the grease from the pan. Add vegetables and cook for about 5 minutes.
Add the roasted butternut squash to the pan, half of the cooked Farmer John Classic Premium Bacon and half of the cooked Farmer John Classic Pork Sausage Links.
Mix well.
Turn oven on to broil.
Place cooked food back in the roasting pan, top with cheese and broil for about two minutes.
Remove from oven and garnish with remaining Farmer John Classic Pork Sausage Links, Farmer John Classic Premium Bacon, and green onions.
Serve warm with toast.
