Don’t forget, April is National Grilled Cheese Month and I’ve created another one of my favorites!
Roasted Peppers and Goat Cheese Grilled Cheese is a flavor explosion. Of course, I didn’t stop with just one cheese, I had to include sharp cheddar cheese as well.
First, purchase a bunch of baby bell peppers. I got mine at Costco but I know most grocery stores sell them as well.
I used 8 medium sized ones, but if you happen upon smaller ones, double the amount.
Roast the peppers until slightly blackened on both sides.
Next, I assembled the sandwiches with crumbled goat cheese on the bottom bread, topped with the peppers, topped with sharp cheddar cheese, topped with the second bread.
Place a little olive oil and butter into a pan over medium heat, cook about 2-3 minutes until slightly browned and cheese melts.
Look at what we created, this is a big bite of ooey gooey goodness!
Time to eat people, enjoy!
