It’s been a long week folks.
I’ve missed a few days of sharing recipes because I was preparing Baby Girl for back to school.
Not only is Baby Girl returning back to school my mother has just relocated to Las Vegas from Texas.
The great part about my mother arriving is she brought tons of Louisiana Smoked Sausage.
My Sausage Egg Cheese Biscuit with Louisiana Smoked Sausage is the ultimate back to school/welcome to Las Vegas breakfast!
First, let’s start off with my favorite Red Lobster Cheddar Bay Biscuits.
YEP, they sell them at Sam’s Club and they taste just like the restaurants version of these cheesy, buttery, biscuits!
No time to make a Sam’s Club run then pick up these biscuits from your local Red Lobster.
Secondly, Louisiana Smoked Sausage. You could use your local store bought smoked sausage but you haven’t tasted sausage goodness until you’ve tried Richards Louisiana Smoked Sausage.
I’ve eaten these sausage since I was a little girl and they’re delicious. If you’re not Louisiana bound you can order excellent sausage from Cajun Grocer.
The Poche’s and Savoie brand of smoked sausage are my favorites from Cajun Grocer.
The Richard’s brand that Cajun Grocer sells is not the same Richard’s brand of sausage I grew up eating, it’s a totally different company and product.
Lastly, fry up a few eggs with a pinch of creole seasoning and black pepper.
The end result of these biscuit miracles is the combination of hot, buttery, cheesy biscuits, smokey sausage, and the fried egg is like the icing on the cake.
Although the biscuits have cheese in them, you could also add a extra slice of cheddar cheese to turn these biscuits into a cheese-fest!
I initially was going to take one biscuit and split it in half but decided against that idea because the sandwich wouldn’t have been substantial enough to hold all the smokey sausage goodness!
I fixed this problem by using two biscuits, yep, what’s better than one cheesy, buttery, biscuit?
Two, cheesy, buttery, biscuits!
All done and the first bite just made me smile.
This meal made me break out into my happy biscuit dance.

Ingredients
- 8 Red Lobster Cheddar Bay Biscuits
- 1 lb Louisiana Smoked Sausage
- 4 eggs
- pinch of creole seasoning
- pinch of black pepper
- extra virgin olive oil
Instructions
- Cook biscuits according to package directions.
- Add a little olive oil to a pan over medium heat, split sausage in half in fry until crispy on both sides.
- In a separate pan add more olive oil and fry eggs adding a pinch of creole seasoning and black pepper.
- Assemble sandwich by stacking sausage, eggs, and two biscuits.

Oh my that special sausage! I want it! I could easily eat one, two or three of these babies. They look delicious and I love breakfast food.
