Christmas is just around the corner and it’s the perfect time of year to bake our favorite snacks.
I was thinking about what I enjoy most about this time of year and next to shopping, it really is all about the snacks for me!
I want to shop and snack all day.
My Banana Nut Bread with Cream Cheese Glaze is the perfect snack that one could actually bring along on the shopping trip.
I personally believe the key to moist Banana Nut Bread starts with perfectly ripe bananas.
Leave those babies out on the counter for a few days then make bread.
I always purchase organic bananas.
Bananas, lettuces and carrots are often the cheapest organic items in the grocery store and worth the extra few pennies.

Ingredients
- 3 overripe bananas
- 2 cups pecans, chopped
- 1 stick butter, room temperature
- 2 large eggs
- 2 teaspoons vanilla
- 4 tablespoons sour cream
- 2 cups flour
- 1 cup white sugar
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon baking powder
For the Cream Cheese Glaze:
- 1 stick of butter, unsalted, room temperature
- ½ cup Non Fat Vanilla Chobani Yogurt
- 4oz. Cream Cheese, room temperature
- 1 teaspoon vanilla
- 3 cups confectioners sugar
Instructions
- Preheat oven to 325 degrees.
- In a mixer add butter and sugar and beat well until light and fluffy, add bananas and mix well until semi chunky, add eggs, vanilla and sour cream, mix well.
- In another bowl sift, flour, baking soda, baking powder and salt.
- Pour into wet ingredients, mix slightly, do not over mix.
- Add pecans and fold into batter mixing the batter until all flour has been mixed well.
- Scoop mixture into bakers 3/4 full bake for 40-45 minutes at 325 degrees are until a toothpick comes out clean in the center.
- Allow bread to cool slightly and top with cream cheese glaze and extra pecans.
For the Cream Cheese Glaze:
- To prepare the glaze, in a mixer, mix butter,yogurt and cream cheese for about 2 minutes, add vanilla and sugar, mix well and set aside.

Followed recipe exactly. And the center was raw. I do not live in high altitude. I cooked it longer and outside of bread got a little too dark and still center raw. What did I do wrong? Tasted it, and Its Dee-lious but center raw. Oh please help. I would like to try it again.
Hi Anna, maybe try increasing your oven by 25 degrees and make sure to check it about 10 minutes earlier just in case. I have a gas convection oven and that could be the issue. Hope this helps.

Well I live practically at sea level. In fact I work at sea level. So this recipe should work just fine and dandy with me. Scads of nuts——yum. And I am sorry this is way too good to be a bread. This is a cake in loaf form. Ha!

So I ran across this receipe today n had all te ingredients already, which was a sign to me nevertheless I followed the steps as directed n it was wonderful n the icing omg omg it was amazing!!!!

Yes I always love to mix my peppers in my potato salad, I love colors so I use a variety. You could just use green if you prefer. I love Hellmanns/Best Food, the flavor is just unbeatable and in potato salad that makes all the difference. Thank you for stopping by.
