We’re going Greek today!
I wanted to create a recipe that would be the perfect lunch time meal.
My Greek Chicken Salad Sandwich is not only simple to make, it’s beyond delicious!
I started off with marinated boneless, skinless, chicken breast.
You can roast the chicken in the oven, or even better, throw the chicken on the barbeque grill!
After the chicken is cooked, allow it to cool slightly before grounding it up in a food processor.
If you prefer chunkier chicken then dice the chicken up and place it into a big bowl.
Big Goo and Baby Girl prefers ground chicken and that’s where my genius idea of placing the chicken in a food processor for the perfect creamy texture came from.
After you ground the chicken place it into a large bowl with feta cheese, mayonnaise, Greek yogurt, lemon juice and spices.
Lastly, I toasted a loaf of Ciabatta bread, brushed it with a little extra mayo and topped it with fresh lettuce and tomatoes.
This makes a lot of chicken salad, I really could’ve gotten 6-8 generous servings which would require two loaves of Ciabatta bread.
Because I wanted to save some salad to eat with crackers as a late night snack, I just made one sandwich and cut it into 6 pieces.
It’s time to eat and I wrapped the remaining sandwiches in saran wrap and placed them in the refrigerator.
All the family has to do is pack them in their lunch!

Ingredients
- 4 boneless, skinless, chicken breast
- 1 cup Greek yogurt, plain
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 lemon, zested, juiced
- 1/2 tablespoon creole seasoning
- 1/2 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1/2 tablespoon oregano, crushed, dried
For the Salad Dressing:
- 1 cup mayonnaise
- 1 cup Greek yogurt, plain
- 1 cup feta cheese, crumbled
- 1/2 cup red onion, minced
- 1 cucumber, seeded, grated
- 1/2 lemon, zested, juiced
- 1 1/2 teaspoon black pepper
- 1 teaspoon creole seasoning
- 1 teaspoon oregano, crushed, dried
- pinch of crushed red pepper
- tomato to garnish
- lettuce to garnish
- toasted ciabatta bread
Instructions
- Rinse chicken, pat dry, place in bowl.
- Mix seasoning blend together and top chicken with seasonings and remaining ingredients.
- Mix well and marinate at least 4 hours or overnight if desired.
- Preheat oven to 400 degrees.
- Place chicken on a baking pan and bake for 30-40 minutes are until the temperature reaches 165-F on an instant read thermometer.
- Remove chicken from oven and allow to cool.
- Chop chicken into pieces and place in a food processor to ground.
- Add chicken and all remaining ingredients to a bowl and mix well.
- Serve on toasted with sliced tomato and lettuce.
