With back to school fast approaching I am all about creating no fuss, easy recipes!
My Slow Cooker Chicken Soup with Smoked Turkey and Success® Rice is the perfect meal for those busy nights.
I love fix it and forget it meals and this is one easy dish to prepare!
First, I used boneless, skinless, chicken breast. I also added smoked turkey to kick up the flavor!
Next, I added frozen peas and carrots. Very simple!
Lastly, I added chopped onion, celery, spices, and broth.
That’s all the work required.
While the chicken soup is cooking we can start making the most important part of our dish, the rice!

Slow Cooker Chicken Soup with Smoked Turkey and Success® Rice
- Prep Time: 5 minutes
- Cook Time: 4 hours
- Total Time: 4 hours 5 minutes
Ingredients
- 1 box Success® Rice
- 4 boneless, skinless, chicken breast
- 1 smoked turkey drumstick or wing
- 6 cups chicken broth, low sodium
- 2 cups frozen peas
- 2 cups frozen carrots
- 1 onion, diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
- 2 bay leaves
- 2 teaspoons of creole seasoning or seasoning salt
- 2 teaspoons black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon smoked paprika extra virgin olive oi
Instructions
- Mix seasoning blend together and set aside.
- Rinse chicken and pat dry.
- Add vegetables to slow cooker, drizzle 1 tablespoon of olive oil on top of vegetables and coat with 1 tablespoon of seasoning blend, mix well.
- Place chicken into slow cooker on top of vegetables, coat with 1 tablespoon of olive oil and rub into skin.
- Season chicken with 2 tablespoons of seasoning blend. Rub well into skin.
- Add bay leaves and broth.
- Season with remaining seasoning blend, mix well.
- Place lid on slow cooker and cook on high for 3 1/2 hours.
- Shred chicken and place back into slow cooker, remove bay leaves.
- Remove smoked turkey and shred, discarding turkey skin, add back to slow cooker.
- Allow soup to cook 30 more minutes without the slow cooker lid.
- Cook rice according to package directions.
- Place a big scoop of rice into bowl, top with soup and serve immediately.

I use Success rice when I make a stir fry dinner and the whole family loves it.
I serve the rice with refried beans and cheese.

I like to add rice to chicken soup, either regular chicken soup or a coconut based soup. Success rice is so easy and quick and great to have on hand.

You make me laugh! I only use my slow cooker to keep soup warm when I have guests over. I’m glad I’m not the only one who is not a fan of them. I always say using a slow cooker is like fake cooking. I know, its stupid, but it is indeed what I think!

I use rice so many ways. I like to use it as the base for my stir fry veggies and I’ll make a double batch so I can make fried rice with the leftovers. And again, fried rice is a great one dish meal with leftover chicken or pork and diced veggies added. Or it can be a side dish for my favorite Asian meals.
