It’s snack time folks!
And what better way to snack then on Candied Nuts!
In under 20 minutes these nuts are warm and ready to eat.
First, let me tell ya’ about these nuts!
I like to use raw nuts because they don’t have anything extra added to them.
If you can’t find raw nuts or unsalted nuts make sure you taste the final product before adding any extra salt.
I’m using Himalayan pink salt because it’s my favorite. It gives a nice sweet and salty balance to the Candied Nuts.
Secondly, I used half evaporated milk, half water as my base liquid.
I love the flavor I get from evaporated milk and it makes the nuts taste a little like pralines.
Lastly, the key to the nuts turning our candied is to make sure you don’t stop stirring until all the liquid is evaporated out the pan.
Lower the heat if needed to prevent burning the sugars.
Add the vanilla at the last minute and be prepared to work quickly.
I like to have a prepared buttered cookie sheet or wax paper to immediately place the hot nuts on.
I handed Big Goo a spatula so we could move quickly and get the nuts spread out.
If you’re the only hands then work quickly so the nuts want clump together.
Not that having them stick is a issue because in the end they still taste delicious!
This makes a nice quantity of nuts because they’re addictive and it’s the holidays so you’ll have enough for unexpected guest.
Keep these babies stored in an airtight container and they’ll stay nice and fresh for days!
Believe me when I tell you, they wont last that long.

Ingredients
- 2 cups raw pecans
- 2 cups raw almonds
- 2 cups raw cashews
- 1 cup white sugar
- 1 cup brown sugar
- 1/2 cup evaporated milk
- 1/2 cup water
- 2 teaspoons cinnamon
- 1 teaspoon vanilla
- 1/2 teaspoon pink Himalayan salt
Instructions
- Mix sugar, milk, water, and cinnamon together in a large pot.
- Bring mixture to boil.
- Add nuts and cook for about 15 minutes over medium heat, stirring constantly.
- Reduce heat if needed.
- Continue to cook until all liquid is dissolved.
- Stir in vanilla and pour mixture immediately onto a buttered cookie sheet.
- Spreed out so nuts want stick together.
- Sprinkle salt and allow nuts to harden about 10 minutes.
- Store in a closed container.
